I love Chinese Five Spice (or Five Spice Powder)-- from grinding and blending it, to cooking with it. A well balanced Five Spice is the perfect example of how several flavors can create a new and unique flavor. Also, for me, it's one of the few blends that smells significantly different from how it tastes. It's important to never buy or follow a recipe that uses regular black pepper (even tellicherry or some other high-end pepper)--it really needs to be Szechuan Pepper (aka fagara; an ash berry). Szechuan Pepper has a natural sweetness to it and is key to giving Five Spice its unique flavor.
I created Orange Sesame Five Spice Rub for pork, chicken, and as a stir-fry seasoning. The rub surprised me by being especially delicious on all kinds of fish from tuna to haddock. I really love it on scallops!
