This past Christmas, I roasted a mixture of almonds, walnuts and cashews with the Vindaloo spice mix, packaged in small bags and gave as presents to friends. The taste was fabulous with just enough heat and flavor to satisfy those who like things spicy and those who say they cannot eat spicy foods! :) The Vindaloo also brought a more distant flavor that a traditional salt-based rub, and helped me avoid giving sugary-buttery nuts to friends for the holidays. Love it! One of my favorite spices and yours is the best! I first purchased it at a farmer's market in Belfast, Maine.
