My favorite blend perhaps of all time, it’s certainly the most fun to make. Berbere: A traditional Northern African spice blend, particularly found in Ethiopian and Eritrean cuisine. I was introduced to berbere in a foul moudamas breakfast dish (fava bean paste served with lettuce, tomato, and French Bread ) at an Eritrean restaurant in DC. We have been having a pretty raw spring. Stephen and I turned the furnace off a few weeks ago -- optimism prevailing. We turned it back on within a couple of days -- reality setting in. I’ve been thinking a lot about family recipes and ethnic dishes with the passing of Easter.  I’ve been looking at Makowiec recipes (Polish poppy-seed roll-a traditional Holiday sweet-bread) and other Central & Eastern European foods.  When I realized that I had most of the ingredients for Pork with Sauerkraut and Apples-another traditional Polish or Czech dish,or so I thought.
